Crockpot Potato Soup

Crockpot Potato SoupThere is nothing better than the feel of autumn approaching. I’m just one of those girls. I have my fall decorations out – and my sweaters and scarves – the very second the first leaf falls. I can’t help it! Bring on the cinnamon-spice scented candles! The hot chocolate! The ankle boots and ripped skinny jeans!

Whew, see, I’m getting all excited. Anyway, another thing I love is simple, but yummy recipes, and what better way to get simple than with crockpot recipes? You throw things in there and let it cook all day long while you sit and watch Netflix…I mean write books. (It’s a good thing my hubby doesn’t read this! haha!!) And with autumn approaching it’s time to let the grill chill and crank out those fall-like recipes of soups, roasts and casseroles! (Is it just me or is my age showing?)

So here is a recipe for potato soup that’s a huge hit at my house. My family lived in Michigan for several years when my hubby was stationed there as a Marine Recruiter, and we always went to Bennigan’s restaurant for their potato soup. I think I’ve come pretty close to how they make their soup by testing and adding my own touch to several soup recipes. By the way, the toppings are what really makes this soup delish, so make sure to top with your favorites!

Ingredients:

  • 7-9 Russet Potatoes – Peeled & Diced
  • 1 Medium Onion – Diced
  • 3 Cans of Chicken Broth
  • 1 Can Evaporated Milk
  • Salt & Pepper
  • 1/3 Cup of Butter
  • 1/3 Cup of Flour

Toppings:

  • Bacon!!! <—- who doesn’t love Bacon? Seriously.
  • Green Onion
  • Sharp Cheddar Cheese
  • Sour Cream

Directions:

Place potatoes, onion, chicken broth, evaporated milk and salt & pepper in crockpot. Cook on low for 8 hours.

(After 8 hours) Ladle out 2 cups of liquid from soup mixture. Set aside in a small bowl.

Melt butter in a medium saucepan. Add flour. Turn off heat and slowly stir in the 2 cups of liquid from the soup mixture. Stir for a few minutes, allowing mixture to thicken.

Mash potatoes in the crockpot. Add butter mixture and cover and cook on high for about ten more minutes to allow the soup to thicken more.

Use an electric mixer to smooth the soup mixture to desired texture.

Sprinkle with toppings (Bacon!!) and enjoy!
